Soil and terrain > Hilly land, with an elevation of about 250 m above sea level. Calcareous soils, with the vineyards alternating with olive groves and Mediterranean maquis.
Winemaking process, maturation and development > The freshly harvested grapes are carefully selected, then put to dry on racks under the sun for about 15/20 days. After a brief maceration at 0°C followed by pressing, the must undergoes the delicate phase of fermentation at very low temperature, to exalt its aroma. After fermentation has been completed, the wine develops in vats for about six months, followed by further maturation in the bottle.
Tasting notes > The colour is brilliant golden yellow. This wine has an intense and elegant notes, with flower aromas accompanied by delicious flavours of nuts and honey, aromatic herbs and mineral notes. In the mouth it is dense, balanced, with good acidity that balances the sugars and produces a long and elegant finish.
Matches > An end-of-meal wine, it matches very nicely with blue or mature cheese and to traditional Sardinian sweets.
Serving > Serve at 13°C, uncork just before pouring.
