Vinification and aging
Simple, traditional processing techniques, intended to ensure that the grapes are treated with the utmost respect. The golden, fully ripened grapes, offering great aromatic potential and exceptional concentration, are de-stemmed and pressed. Maceration on the skins for 4 days is followed by a gentle pressing and cold settling of the must.
Spontaneous fermentation, without the use of any selected yeasts, is carried out partly in steel and partly in French oak barrels. The two batches continue to develop separately, with one batch maturing at a low temperature in steel, without malolactic fermentation, while the other batch undergoes malolactic fermentation in barrels.
Aging the wine in this way contributes to enriching and enhancing the bouquet and taste profile of C’era Una Volta.
Tasting
The wine is the yellow-gold of bright sunlight. Its bouquet is intense, with a strong floral hint of chamomile and warm notes of ripe yellow fruit. Light, sweet hints of oak round out its richly expressive bouquet and pleasantly ethereal finish.
The entrance on the palate is enchanting, thanks to its impressive volume and long persistence. The sweet elements of the wine’s taste profile — alcohol, polyalcohols, vanilla and fruit — are beautifully balanced with its vibrant, fresh, savory character.
Pairings
A structured wine capable of holding its own in the most daring pairings. It is at its best with first courses in general. Exceptional with roasts and our local truffles.
